Cabot Trail Maple Fudge

Cabot Trail Cream Moderate Gourmet, Special Occasion

Inspired by Canadian tradition.

Ingredients

  • 750 ml (2 ½ cup) brown sugar
  • 125 ml (½ cup) Cabot Trail maple cream
  • 125 ml (½ cup) 35% cream
  • 60 ml (¼ cup) salted butter
  • 15 ml (1 tbs.) white chocolate
  • A dash of vanilla extract

Tip

Add finely chopped walnuts or pecans for texture.

Preparation

  • In a saucepan over high heat, place brown sugar, Cabot Trail maple cream, and cream.
  • Cook until the thermometer reaches 110°C.
  • Add the butter and vanilla and cook until it reaches 112°C.
  • Remove from heat and stir in the white chocolate.
  • Cool over an ice bath, while mixing until the mixture is smooth.
  • Pour into a buttered mold and spread evenly with a spatula.
  • Let it cool until the maple fudge sets and cut into portions.
