TO MAKE PUMPKIN SPICE SYRUP: Bring 1/3 cup water, 1/3 cup honey, one cinnamon stick, and an inch of ginger to a boil. Boil for 2-3 minutes. Remove from heat, stir in 1/2 cup of pumpkin puree and 1 tsp. of vanilla extract. Strain into a glass jar and refrigerate.

Ingredients

  • 1 medium size pumpkin
  • 500 ml (2 cups) Chic Choc Spiced Rum
  • 250 ml (1 cup) Pumpkin spice syrup
  • 190 ml (¾ cup) orange juice
  • 190 ml (¾ cup) lemon juice
  • 3-4 dashes of Angostura bitters
  • 2L (8 cups) root beer
  • 1 orange sliced
  • 3 cinnamon sticks
  • Ice cubes

Preparation

  • Carve a medium size pumpkin.
  • Add to the gutted pumpkin: pumpkin syrup, Chic Choc Spiced Rum, orange juice, lemon juice and Angostura bitters.
  • Add 1L root beer (or more, to taste), ice cubes, orange slices and cinnamon sticks.
  • Serve in glasses filled with ice cubes.
